Ingredients
- 4 boneless, center-cut pork chops (6-8 ounces each), about 1-inch thick
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 2 cloves garlic, finely minced
- ¼ cup chicken broth
- 3 tablespoons fresh lemon juice
- 1 tablespoon freshly chopped parsley
- Salt and freshly ground black pepper, to taste

- Prepare the Pork Chops:
- Remove the pork chops from the refrigerator and let them sit at room temperature for about 15-20 minutes.
- Thoroughly dry the pork chops with paper towels.
- Season both sides of the pork chops with salt and freshly ground black pepper.
- Sear the Pork Chops:
- Heat the olive oil in a large skillet over medium-high heat until hot.
- Add the pork chops to the skillet and sear for 3-4 minutes per side, until they are golden brown and slightly firm when pressed.
- Create the Lemon Butter Sauce:
- Reduce the heat to medium.
- Add the butter and minced garlic to the skillet. Cook for about 1 minute, until the garlic becomes fragrant.
- Pour in the chicken broth and fresh lemon juice, scraping up any browned bits from the bottom of the skillet to enhance the sauce's flavor.
- Bring the sauce to a gentle simmer and cook for 2-3 minutes, until it thickens slightly.
- Finish Cooking the Pork:
- Return the pork chops to the skillet and cook for an additional 3-5 minutes, or until they reach an internal temperature of 145°F (63°C). Use a meat thermometer to ensure accuracy.
- Serve:
- Remove the pork chops from the skillet and place them on a serving platter.
- Spoon the lemon butter sauce generously over the pork chops.
- Garnish with freshly chopped parsley and lemon wedges.
- Serve immediately.
