Chuck
Flavorful shoulder and neck cut with a great meat-to-fat balance. Ideal for roasts, cube steaks, and premium ground beef. It also yields flavorful steaks, including the prized and less common blade steak.

Rib
Of the 13 rib pairs, the 6th-12th are prime rib, including backbone sections. The first five connect to the chuck, and the 13th to the loin. Other flavorful rib cuts include prime rib, short ribs, ribeye filet, and ribeye petite steak.

Loin
The loin, from the lower back, yields tender and highly desirable cuts like tenderloin (filet mignon), sirloin, Porterhouse, T-bone, New York strip, and Chateaubriand. These premium cuts cook quickly.
